Please make some more.<br> <br> I'm not a huge fan of "canadian" brie, as I find many of them too creamy - just creamy I mean, not much else (or taste!) to it. But yours was wonderful - the texture was firm, but...creamy, and the taste was wonderful. The rind was perfect - edible, and a gem in its own right. I lived in France a long time ago, and the brie tasted a bit like your brie - and was a far cry from the "canadian" bries that I have tried over the last few years.<br> <br> I had yours on rye crackers from the window-edge bakery at the Halifax market, and I also put some in a tarte. Since that time we have driven to Nova Scotia at least once each year, planning around a stop at the farm.
